I impulse purchased a plantain the other day because the plantains were nearly perfect and I realized it had been forever since I bought one.
But when I got home I couldn’t remember what I used to make with plantains back when I was on a plantain kick. I still can’t remember. All I know is that there were a few weeks of my life (last year) when I bought plantains all the time, and I made something with them.
I even searched my Sweet Success archives, my Pinterest boards, and I looked back at some of my fave blogs for recipes I may have made. Still nothing.
So I created a new recipe with my plantain.

I created an almond plantain pancake recipe that is so delicious. These pancakes taste hearty, but they’re still fluffy. They have just a hint of sweetness from the plantain. I also used almond flour so if you don’t eat gluten, you could make these and enjoy them!
