Apple Cinnamon Baked Oatmeal

I’ve been on my elimination diet for over a week now, and I (surprisingly) haven’t had any major cravings. But I’ve been feeling like I need a breakfast change up.

I’ve been struggling with breakfast because I can’t have gluten or eggs! I eat oatmeal for breakfast five or six days a week, so I bought gluten-free oats to help get me through my three-week elimination diet.

To make my mornings move a bit quicker, I made this baked oatmeal. It’s perfect because I threw the leftovers in the refrigerator and I can just heat up a serving in the morning!

Before I tell you about this recipe, I want to say that I normally don’t make a lot of recipes that are gluten-free, egg-free, dairy-free, etc. But I’ve eliminated those things from my diet for a short time to see if I have any food sensitivities. So this recipe is perfect for those with food allergies or even if you just want a quick and healthy breakfast on workdays.

This oatmeal isn’t as sweet as I usually like it, but because I’ve been off sugar for over a week my sugar cravings have diminished and I was ok with a not-so-sweet oatmeal. The apples, banana and stevia add a bit of sweetness, but you can add honey or pure maple syrup if you want a sweeter oatmeal.

I topped my oatmeal with some sunflower seed butter and goji berries. Top your oatmeal with your fave toppings!

Apple Cinnamon Baked Oatmeal

Ingredients

  • 2 cups gluten-free oats
  • 2 tablespoons chia seeds
  • 1/4 teaspoon sea salt
  • 1 teaspoon cinnamon
  • banana, mashed
  • 1 teaspoon pure vanilla extract
  • 2 organic Fuji apples, chopped (or use your favorite apple)
  • stevia, to taste
  • 2 cups milk (soy, rice, almond etc.)

Instructions

  1. Preheat oven to 375 degrees.
  2. Spray a baking dish with coconut oil spray or other non-stick spray.
  3. Combine oats, chia seeds, sea salt and cinnamon in a bowl. Add mashed banana and combine. Stir in vanilla extract.
  4. Fold in apples and add sweetener of choice.
  5. Pour oat mixture in baking dish. Pour milk over mixture.
  6. Bake for 40 minutes, then let cool for about 10 minutes before cutting.
  7. Enjoy!
