Chia pudding is one of my favorite sweet snacks. I always crave a little sweet treat in the afternoons, and a bowl of chia pudding always satisfies my sweet tooth.
Chia seeds are packed full of fiber, antioxidants and omega-3 fatty acids, so I’m also getting a nutritious little snack.
I’m currently obsessed with berries. Berries are finally flavorful and affordable enough to buy, so I’ve been buying them all!
I don’t know how I came up with this recipe. I think I was just making chia pudding and thought, ‘What will happen if I blend up the blueberries with the chia pudding mixture?’ And then I threw in some almond extract and magic happened.
I usually top my chia pudding with extra berries and sometimes even almond butter for a little protein boost.
