These blueberry lemon overnight oats are the perfect combination of sweet and tart, and they’re a great make-ahead breakfast for mornings when you don’t have a lot of time.
I eat oatmeal for breakfast almost every day during the work week. My go-to in the spring/summer is always old fashioned oats, chia seeds, cinnamon, goji berries, honey or pure maple syrup, almond milk, berries and almond butter. I throw it together in the morning, and eat it cold. I love, love, love it.
But I decided to change things up, and prepare my oats ahead of time. I got a crazy idea to combine the flavors of lemon and blueberry, and it was magical.
If you like a little bit of tartness, you will love this oatmeal. But don’t worry, this bowl of oats still has some sweetness thanks to pure maple syrup. You can adjust the sweetness by using more or less, and you could even use honey, stevia, brown sugar or your favorite sweetener instead of maple syrup.
Besides this bowl of oats being absolutely delicious, you get the benefits of lemon and blueberries! Blueberries are full of antioxidants and lemons help restore the body’s pH, help with digestion and are full of vitamin C.
