One of the things I look forward always look forward to are our bi-annual cabining trips. About twice a year, the BF and I join seven of our friends at a state park for a long weekend in a cabin in the woods.
Our first cabining trip of 2017 was at Mahoney State Park. We spent the weekend hiking, playing games, eating good food, laughing and relaxing.
I decided to use the weekend as an excuse to disconnect from social media, email and work. It felt really good to take a break and really focus on being present.
Friday, Feb. 17
The BF and I arrived at the cabin around 8 p.m., and we were greeted with delicious Indian food made by Mark and Beth. We all take turns making meals. I love this because we always eat an abundance of great food.
We spent the evening enjoying some drinks, chatting and laughing.
Saturday, Feb. 18
Meggan and Kevin made breakfast burritos, and we had mimosas and coffee on our first morning in the cabin.
We took our time getting ready for the day, then we headed out for our first hike of the trip.
The weather was absolutely amazing. It ended up being in the low 70’s, which is very unseasonable for February. But we enjoyed the sunshine and warm weather.

When we got back to the cabin we had some of my energy balls. I made my Peanut Butter Chocolate Chip Cookie Dough Balls and Gingerbread Energy Balls.
The BF and I made lunch – black bean burrito bowls. The cabin only had tiny bowls, so we ate our burrito bowls on plates.
While everyone relaxed, I went out on the deck and did yoga. It felt amazing to do yoga in the sun with a view of the woods.
The BF and I headed out on another hike on our own in the afternoon.

I couldn’t believe the weather. It was perfection.
When we got back to the cabin, we enjoyed some drinks and played games, and I took some time to journal. It was so nice, we had all the windows open.
Dinner was a turmeric couscous chicken soup and homemade bread made by Betsy and Tony.
We spent the evening by the fire.
Sunday, Feb. 19
Everyone else had sausage rolls and cinnamon rolls, so I made protein pancakes for Russanne and I (we’re both eating dairy-free). I also had one of the almond chocolate chip muffins I made…
….and mimosas, which is a cabining staple. I also mixed up my antioxidant/electrolyte drink to stay hydrated.
The morning was super relaxed. Some of the group played a board game, the BF slept in, I read a book and worked on an adult coloring book and others went hiking.
We eventually snacked on veggies, crackers, hummus and cashew cheese.
Russanne made Mexican chicken soup for lunch, which was delicious.
Betsy, Tony, the BF and I went for an afternoon hike.
We played Codenames.
Meggan and Kevin made enchiladas and Mexican salad with avocado cilantro dressing for dinner. They were super thoughtful and left the cheese on the side so Russanne and I could enjoy the enchiladas, which were so good.
We spent the evening having drinks by the fire, playing Quelf, going on a short night hike and staying up late chatting.
Monday, Feb. 20
We had a quick breakfast of leftovers, packed up and headed out pretty early.
It was another wonderful cabining trip. I always love these trips because there’s no pressure to be anywhere, follow a schedule or do anything specific. Time always seems to go so slowly because I’m not distracted by my to-do list or packed schedule. Days seem slow and long.
