I’m pretty sure I’ve mentioned how much I love snack/energy balls….
Well, these Cashew Cookie Balls are on another level. They have just a few simple ingredients, but they are so so delicious. I’m calling them cookie balls because they really taste like rich cookies
They are sweetened with dates and pure maple syrup, and they are plenty sweet. I’ve been eating these to satisfy my post-meal sweet tooth.
And let’s be real, cashews are pretty much the best nut ever. (don’t tell my almond butter). Cashews are rich in copper (antioxidant defense, energy production), phosphorus, manganese, magnesium (healthy bones) and zinc (immune function). Cashews are also rich in monounsaturated fats, which keep your heart healthy (source).
