I admit, I made cauliflower rice a long time ago when it was all over the internet…then I never made it again.
There was just something about chopping cauliflower and ricing it in the food processor that was too much…dirtying too many dishes and adding too many extra steps in my dinner making process.
So I finally decided to buy a package of pre-riced (also called ‘crumbled’) cauliflower and now I feel better about the whole thing. I can handle opening a package and dumping it into a pan.
I made this cauliflower rice stir fry with tofu, and it was easy and delicious…my dinner requirements.
*This made two servings. You could use 1 of everything (instead of 1/2) and double the liquids and make 4 servings.
