Chia pudding is the perfect make-ahead breakfast or snack. It’s sweet and delicious, and full of omega-3’s, fiber and antioxidants.
Chia pudding is one of my fave sweet breakfast foods or afternoon snacks! It’s super easy to whip together, it’s delicious and it’s full of nutrients.
Chia seeds are full of fiber, antioxidants and omega-3 fatty acids.
I usually just throw together some almond milk, chia seeds and a natural sweetener, but I decided to make a chocolate version to satisfy my desire for chocolate.
It was delicious!
I also added some avocado to give this pudding some healthy fats. But don’t worry, you can’t taste the avocado at all. Avocado is seriously magical – the flavor of avocado completely disappears when you add it to smoothies or to chia pudding, but you still get all the nutritional benefits! You can totally buy frozen avocado to make this step easier.
I like topping my chocolate chia pudding with berries or banana slices. If you’re super fancy, you could add dark chocolate shavings.
My recipe suggests blending the ingredients, but you don’t have to if you don’t mind the texture of chia seeds. Blending the pudding gives it more of a uniform texture. You should definitely blend if you add the avocado, especially the frozen avocado.
Chocolate Chia Pudding
2/3 cup coconut milk
2 tbsp. chia seeds
1/2 tsp. cinnamon
1/2 tsp. pure vanilla extract
1 tbsp. cocoa powder
1/2 tbsp. pure maple syrup
Combine all ingredients in a blender. Blend until smooth. Store in a sealed container and chill overnight.
Top with desired toppings.
