Chocolate Coconut Banana Trail Mix

I LOVE trail mix. It’s such a satisfying and delicious snack that provides you with lots of energy.

But when I buy a bag of trail mix or make a large batch at home, it’s hard to stick to just one serving size. A serving of trail mix is usually just 1/4 of a cup or so.

That’s why I like to make a single serving of trail mix for a quick afternoon snack, to eat before a workout or to satisfy my sweet tooth.

I was inspired to make this trail mix because I found this unopened package of Trader Joe’s Roasted Coconut Chips in my cupboard. I bought it back in May and forgot about it. When I tried the coconut chips I was blown away by how incredibly delicious they were (and mad at myself for letting them sit unopened for so long!).

Do you ever buy something new to try, then let it sit in your pantry forever? I challenge you to try something new out of your own kitchen! You may find a new fave snack or meal!

I thought the coconut chips were going to be like larger unsweetened coconut flakes (and wasn’t sure what to do with them), but they are more like a sweet chip. I could eat them on their own they’re so good.

If you don’t have a Trader Joe’s where you live (I don’t), you can purchase coconut chips online. Find them here! There’s even a Caramel Sea Salt version that sounds AMAZING!

Back to the trail mix…I also had a package of banana chips that my mom gave me. It just seemed natural to put banana and coconut together. I added almonds to give the mix a bit of protein and saltiness (I used Blue Diamond Lightly Salted) and chocolate because trail mix must have chocolate.

The result was a delicious flavor combination. I’ve eaten this almost every day this week!

Ingredients

  • 2 tablespoons Banana Chips
  • 1 tablespoon dark chocolate chips
  • 1 -2 tbsp. coconut chips
  • 12 almonds (1/2 a serving)

Instructions

  1. Combine and enjoy!
