I’ve expressed my love for champagne cocktails many times here on Sweet Success, so it’s probably no surprise that I concocted a summery watermelon champs cocktail for the Fourth of July.
If you haven’t jumped on the champagne cocktail wagon yet, you need to ASAP! They are so easy and delicious. And an added bonus is champagne is pretty low in calories (about 90 calories per serving). When you add a splash of 100% juice, you just add a few extra calories, and you’re getting the health benefits of the juice you use!
Watermelon is super hydrating, and is a good source of vitamins C, A and B, magnesium, lycopene and potassium. (source)

The BF and I can’t eat an entire watermelon before it goes bad. So when I cut up our last watermelon, I left some for snacking, juiced some and froze the rest. I’ll use the frozen watermelon cubes in smoothies. I juiced the watermelon with the intention of whipping up cocktails…obviously.
This cocktail is soooooo easy. It only has two ingredients – watermelon juice and champagne. Sometimes I add a splash of vodka to my champagne cocktails if I’m feeling a bit wild ; )
You can garnish with blueberries to make it festive. Take it up a notch by freezing blueberries in ice cubes to make your drinks extra pretty!
Also, I buy the 187 ml mini bottles of champagne. They come in a four-pack. I suggest buying these unless you’ll be making drinks for a lot of people or unless you can drink an entire bottle of champagne yourself (hello hangover!).
