Nutty Cranberry Oatmeal

I made my Super Healthy Cranberry Sauce for Thanksgiving just so I could eat the leftovers in my oatmeal. This is my favorite!

You could use any cranberry sauce, but I prefer my recipe because it’s made without refined sugar. I used honey and coconut sugar to sweeten it. I also added chia seeds to give it a little nutrition boost.

Oatmeal is my favorite breakfast. I usually crave something sweet in the morning, and oatmeal satisfies my craving while giving me long lasting energy. I always add nut butter or nuts (or both) to add some protein.

You could also add an egg to the oatmeal while it’s cooking and stir frequently to cook the egg through to add more protein.

Another oatmeal game changer is adding pure maple syrup to our oats after they’re cooked. I used to sweeten my oatmeal while it was cooking, but I love having the syrup in the bowl because it brings out the flavor more.


Nutty Cranberry Oatmeal

Ingredients

  • 1/2 cup old fashioned oats
  • 1 cup unsweetened almond milk
  • 1 tablespoon chia seeds (optional)
  • 1/2 teaspoon almond extract
  • 1 teaspoon cinnamon
  • cranberry sauce
  • 1 tablespoon pure maple syrup
  • Toppings of your choice
  • 1 tablespoon almond butter
  • 1 tablespoon coconut butter
  • pecans, slivered almonds, walnuts, hemp seeds, flax seeds, etc.

Instructions

  1. Bring almond milk to a low boil in a medium pot. Reduce heat and add oats, chia seeds, almond extract and cinnamon. Cook oats until they reach desired consistency.
  2. Pour oats into a bowl. Top with cranberry sauce, pure maple syrup and desired toppings.
  3. Enjoy!
