These peanut butter banana breakfast cookies are the perfect make-ahead breakfast for busy mornings or when you need a nourishing and energizing snack.
I’ve fallen off of the meal prep wagon this winter. But with my new schedule teaching Pilates reformer every day, I definitely need to get back into meal prepping some nourishing snacks for full teaching days.
I started with these breakfast cookies, which I actually ate as snacks mid-morning or in the afternoon.
They’re simple to throw together – everything gets mixed in one bowl – and they’re full of nourishing ingredients like oats, bananas, plant protein, cinnamon, honey, and coconut oil.
I used powdered peanut butter simply because I had some and was running low on nut butter, but you could definitely try using peanut butter or almond butter.
Peanut Butter Banana Breakfast Cookies
1 1/2 cups old fashioned oats
1 scoop vanilla plant protein powder
1/4 cup powdered peanut butter
2 tsp. baking powder
2 tsp. cinnamon
3 ripe bananas, mashed
1/4 cup honey
1 tbsp. coconut oil, melted
Preheat oven to 350°.
Combine dry ingredients – oats, plant protein, powdered peanut butter, baking powder, and cinnamon – in a mixing bowl. Add wet ingredients – bananas, egg, honey and coconut oil. Mix until combined.
Stir in any additional desired mix ins – dairy-free dark chocolate chips, dried cherries, dried cranberries, unsweetened coconut, sliced almonds, etc.
Place a spoonfuls of batter on a cookie sheet lined with parchment paper.
Bake for 15 minutes.
