To be honest, I don’t love eating salads in the fall and winter.
During the summer, salads are my fave. I could eat one every day. But when the weather starts to cool off, I start to crave comfort food – warm, cheesy, carby comfort food.
But I feel better when I eat lots of produce. So to make sure I eat enough fresh produce during the fall and winter, I try to get more creative with my salads.
This pear salad is sooooo good!
I’m obsessed with Gorgonzola. It’s so flavorful and pairs really well with sweet flavors.
I also made my own salad dressing, which I highly recommend. Making your own salad dressing is easy and so much healthier than bottled dressings. I made just enough for this salad, but you can make larger batches and store it in the fridge for a few days.
