Pumpkin French Toast Scramble

French Toast Scramble is one of my favorite healthy breakfasts. It’s so easy to whip up and it’s full of protein.

Because it’s fall, and pumpkin everything season, I created a pumpkin version that is so delicious.

I admit, making sweet eggs sounds a bit weird. But it totally works. This version is perfectly pumpkiny. I highly recommend the almond butter drizzle. It is perfection!

The key to perfect French toast scramble is cooking it over low heat slowly.

Pumpkin French Toast Scramble

Ingredients

  • ½ cup pure pumpkin
  • 2 egg
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1 tablespoon pure maple syrup
  • coconut oil spray or coconut oil
  • almond butter

Instructions

  1. Combine pumpkin, eggs, vanilla, pumpkin pie spice and 1 tbsp. maple syrup.
  2. Spray pan with coconut oil spray or add 1-2 tsp. coconut oil to pan, and heat coconut oil over medium heat.
  3. Pour batter onto pan and cook until eggs are cooked through.
  4. Place in a bowl, top with almond butter and a drizzle of pure maple syrup.
  5. Enjoy!
