Pumpkin Pie Chia Pudding Parfait

I recently made one of my favorite recipes that I created last fall – Pumpkin Pie Chia Pudding. It’s so delicious, and very pumpkin pie-like.

But I realized it could be even more like pumpkin pie if it had whipped cream on top! My whipped cream addition turned into the perfect little fall dessert that will satisfy your craving for pumpkin pie, but without tons of sugar.

The pumpkin pie chia pudding and the homemade whipped cream are made with natural sweeteners. You’re also getting tons of nutrition from the chia seeds, pumpkin puree and coconut milk.

I used graham crackers as the crunchy part of my parfait, but you could use crushed ginger snap cookies or even granola.

Pumpkin Pie Chia Pudding Parfait

Ingredients

  • Pumpkin Pie Chia Pudding
  • Coconut Whipped Cream
  • 1 can coconut milk, full fat
  • pure maple syrup, to taste

Instructions

  2. Leave coconut milk in refrigerator overnight to allow to separate. Pour the creamy white milk into a bowl, leaving the translucent liquid in the can.
  3. Add 1-2 tbsp. pure maple syrup to bowl. Whip with hand mixer until resembles whipped cream. Add more sweetener, if needed.
  4. Layer crushed graham crackers, crushed ginger snaps or granola at the bottom of a bowl or parfait glass. Add a layer of pumpkin pie chia pudding, then coconut whipped cream.
  5. Garnish with more crushed graham crackers or cookies.
  6. Enjoy!
