Want to enjoy some pumpkin pie without ALL the calories and with lots of good-for-you ingredients?
So do I! Which is why I created a super simple pumpkin pie pudding that tastes just like pumpkin pie. Seriously! This pudding is sooooo good.
This is a chia pudding but I blended all the ingredients first, which makes for a smoother texture. Chia puddings usually have that tapioca texture because chia seeds absorb liquid and get puffy. But when you blend all the ingredients together, you get the pudding-like texture without the chia texture.
Why did I use chia seeds? Well, I’m pretty obsessed with these little seeds. I eat them every day! I put them in my morning oatmeal, sprinkle them on waffles or yogurt and I add them to smoothies.
Chia seeds are high omega-3 fatty acids, are high in antioxidants and fiber, and contain calcium, magnesium and other nutrients. (Source)
