I love making protein pancakes because they’re easy to whip up, they’re delicious, they’re satisfying, and nourishing.
I made a pumpkin version because…fall.
They ended up being absolutely delicious.
I topped my pancakes with almond butter, pure maple syrup and pecans, but you could top these pancakes with walnuts, coconut butter, dried cranberries, raisins or whatever else you like.
I always use my favorite vegan vanilla protein powder, but you can use whatever kind you like!
