For Maple Cinnamon Coconut Butter
- 1 tablespoon coconut butter, melted
- 2 teaspoons pure maple syrup
- 1/4 teaspoon cinnamon

- 2 eggs
- 1 banana
- 1 carrot, grated
- 1 tablespoon ground flaxseeds
- 1/4 teaspoon nutmeg
- 1/4 teaspoon allspice
- 1 teaspoon cinnamon
- 1 teaspoon pure vanilla extract
Instructions
For Maple Cinnamon Coconut Butter
- Combine ingredients. Top pancakes with coconut butter.
- Drizzle more maple syrup on pancakes.
- Enjoy!
Gluten-Free Carrot Cake Pancakes
- Place all ingredients (except a little bit of grated carrot for garnish) in a blender.
- Blend until well combined.
- Heat a pan to medium low heat. Spray with coconut oil spray.
- Pour batter onto hot pan, creating mini pancakes or a few larger pancakes.
- Cook until bubbles appear on top of pancakes, then flip.
