Gluten-Free Carrot Cake Pancakes with Maple Cinnamon Coconut Butter

Ingredients

For Maple Cinnamon Coconut Butter

  • 1 tablespoon coconut butter, melted
  • 2 teaspoons pure maple syrup
  • 1/4 teaspoon cinnamon

Gluten-Free Carrot Cake Pancakes

  • 2 eggs
  • 1 banana
  • 1 carrot, grated
  • 1 tablespoon ground flaxseeds
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon allspice
  • 1 teaspoon cinnamon
  • 1 teaspoon pure vanilla extract

Instructions

For Maple Cinnamon Coconut Butter

  1. Combine ingredients. Top pancakes with coconut butter.
  2. Drizzle more maple syrup on pancakes.
  3. Enjoy!

Gluten-Free Carrot Cake Pancakes

  1. Place all ingredients (except a little bit of grated carrot for garnish) in a blender.
  2. Blend until well combined.
  3. Heat a pan to medium low heat. Spray with coconut oil spray.
  4. Pour batter onto hot pan, creating mini pancakes or a few larger pancakes.
  5. Cook until bubbles appear on top of pancakes, then flip.
