Ingredients
Fish
- 2 tilapia fillets
- ½ cup Panko breadcrumbs
- 2 tablespoons chopped fresh parsley
- 1 tablespoon lemon zest
- fresh ground pepper
- 1 teaspoon cayenne pepper
- 1 egg
Dipping Sauce
- 3 tablespoons plain nonfat Greek yogurt
- 1 teaspoon Dijon mustard
- 1 tablespoon fresh lemon juice
- fresh ground pepper
Chips
- 1 sweet potato
- extra virgin olive oil
- sea salt
Instructions
- Preheat oven to 350 degrees.
- Thinly slice the sweet potato. Place on a baking sheet and drizzle with olive oil and sprinkle with salt.
- Place in oven for about 20 minutes or until crisp, flipping halfway through.
- Combine panko, parsley, lemon zest, ground pepper, cayenne and salt.
- Beat the egg in a bowl.
- Dip the tilapia in the egg to coat, then dip in panko mixture. Place in a baking pan.
- Bake for 10-15 minutes, or until fish is cooked through.
- While fish and chips are baking, combine ingredients for dipping sauce.
- Squeeze fresh lemon juice over fish before serving.
