Healthier Fish and Chips

Ingredients

Fish

  • 2 tilapia fillets
  • ½ cup Panko breadcrumbs
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon lemon zest
  • fresh ground pepper
  • 1 teaspoon cayenne pepper
  • 1 egg

Dipping Sauce

  • 3 tablespoons plain nonfat Greek yogurt
  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • fresh ground pepper

Chips

  • 1 sweet potato
  • extra virgin olive oil
  • sea salt

Instructions

  1. Preheat oven to 350 degrees.
  2. Thinly slice the sweet potato. Place on a baking sheet and drizzle with olive oil and sprinkle with salt.
  3. Place in oven for about 20 minutes or until crisp, flipping halfway through.
  4. Combine panko, parsley, lemon zest, ground pepper, cayenne and salt.
  5. Beat the egg in a bowl.
  6. Dip the tilapia in the egg to coat, then dip in panko mixture. Place in a baking pan.
  7. Bake for 10-15 minutes, or until fish is cooked through.
  8. While fish and chips are baking, combine ingredients for dipping sauce.
  9. Squeeze fresh lemon juice over fish before serving.
  10. Enjoy!
