No Bake Almond Butter Cookies

Ingredients

  • 1/2 cup dates
  • 1/2 cup old fashioned oats
  • 1 scoop vanilla plant protein powder
  • 1/3 cup almond butter
  • 1 tablespoon pure maple syrup
  • 1 tablespoon coconut oil, melted to liquid
  • Dairy-free chocolate chunks

Instructions

  1. Place dates in a food processor and pulse. Add remaining ingredients except chocolate chunks. Form into balls, then press chocolate chunks into the balls to flatten into cookies.
  2. Keep refrigerated.
