- 1/2 cup dates
- 1/2 cup old fashioned oats
- 1 scoop vanilla plant protein powder
- 1/3 cup almond butter
- 1 tablespoon pure maple syrup
- 1 tablespoon coconut oil, melted to liquid
- Dairy-free chocolate chunks
- Place dates in a food processor and pulse. Add remaining ingredients except chocolate chunks. Form into balls, then press chocolate chunks into the balls to flatten into cookies.
- Keep refrigerated.
