Pesto Caesar Kale Salad with Cranberries and Almonds

Ingredients

For Caesar Dressing:

  • 6 garlic cloves, minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon white wine vinegar
  • 2 tablespoons mayonnaise
  • 1/2 cup olive oil
  • salt
  • peper
  • lemon juice

For Salad

  • 3 cups kale, chopped
  • 2 tablespoons pesto
  • 2 tablespoons dried cranberries
  • 2 tablespoons sliced almonds
  • salt and pepper to taste

Instructions

For Caesar Dressing:

  1. Combine garlic, mustard, vinegar and a pinch of salt in a blender.
  2. Add mayonnaise and blend.
  3. Slowly add olive oil as you blend.
  4. Season to taste with salt, pepper and lemon juice.

For Salad:

  1. Massage kale for about five minutes until leaves are less bitter.
  2. Toss with desired amount of caesar dressing.
  3. Add pesto, cranberries and almonds and toss together.
  4. Season with salt and pepper.
