- 1 cup coconut milk
- 1/4 cup pure pumpkin puree
- 2 tablespoons chia seeds
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon pumpkin pie spice
- 2 tablespoons pure maple syrup
- Combine all ingredients in a blender or food processor. Blend until chia seeds are incorporated into mixture.
- Place in a container with a lid, and refrigerate for an hour or more.
- Add a dash of pumpkin pie spice for garnish when you serve.
