Ingredients
- 1 cup cold strong coffee
- 1 cup coconut milk
- 1/2 cup pure pumpkin puree
- 3 tablespoons pure maple syrup
- 1 teaspoon pumpkin pie spice
- 1 teaspoon pure vanilla extract
- 1 scoop vegan vanilla protein powder {the best vegan protein powder}
Instructions
- Brew a pot of strong coffee and refrigerate overnight.
- In a blender, combine the coconut milk, pumpkin, 2 tbsp. maple syrup, pumpkin pie spice and vanilla. Pour pumpkin mixture into an ice cube tray and allow to freeze completely. (you should have 12 pumpkin ice cubes)
- Add 1 cup coffee, 6 pumpkin ice cubes, your favorite protein powder and 1 tbsp. maple syrup to your blender. Blend on high until smooth. Add a few tablespoons of coconut or almond milk, if frappe is too thick.
- Garnish with pumpkin pie spice.
