Pumpkin Spice Protein Frappé

Ingredients

  • 1 cup cold strong coffee
  • 1 cup coconut milk
  • 1/2 cup pure pumpkin puree
  • 3 tablespoons pure maple syrup
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon pure vanilla extract
  • 1 scoop vegan vanilla protein powder {the best vegan protein powder}

Instructions

  1. Brew a pot of strong coffee and refrigerate overnight.
  2. In a blender, combine the coconut milk, pumpkin, 2 tbsp. maple syrup, pumpkin pie spice and vanilla. Pour pumpkin mixture into an ice cube tray and allow to freeze completely. (you should have 12 pumpkin ice cubes)
  3. Add 1 cup coffee, 6 pumpkin ice cubes, your favorite protein powder and 1 tbsp. maple syrup to your blender. Blend on high until smooth. Add a few tablespoons of coconut or almond milk, if frappe is too thick.
  4. Garnish with pumpkin pie spice.
  5. Enjoy!
