- 1/2 cup pumpkin puree
- 1 egg
- 1 scoop vanilla protein powder
- 1 teaspoon pumpkin spice
- 1/2 teaspoon cinnamon
- 1 teaspoon pure vanilla extract
- 2 -3 tbsp. unsweetened almond milk
- Combine all ingredients in a bowl. Coat a pan with coconut oil and place over medium low heat. Pour batter onto pan. Cook on each side.
- Top with almond butter, pure maple syrup, pecans, walnuts, dried cranberries or other favorite toppings.
