I made this margarita last Friday for National Tequila Day. But I really don’t think you need to wait for a day like that to come around to enjoy some tequila!
I love this cocktail recipe because it feels a little bit naughty and a little bit healthy. The watermelon tastes incredibly refreshing, and then you get the bite of the tequila. I don’t like a margarita with salt on the rim of my glass, but I don’t mind a dash of salt in my drink. You can rim your glass with salt if you’d like, but I just added a small amount of sea salt to my cocktail. I also skipped the simple syrup because the watermelon adds enough sweetness (this also cuts some cals!).
I used the watermelon juice that I had made ahead of time (and used to make Watermelon Chia Juice). There are a few ways to make watermelon juice…
- Throw watermelon chunks and a splash of coconut water in a blender. Blend and you’re ready.
- Blend watermelon in a blender then strain out the pulp through a fine mesh sieve.
- Use a juicer to juice your watermelon.
I went with the first option because I don’t mind having a little watermelon pulp.
After you have your watermelon juice you’re ready for cocktail time!
