The weather here in Nebraska has been absolutely frigid! The high for the weekend is -1º. When the high is a negative number, it’s really freakin’ cold.
So hot chocolate is an absolute must!
My niece and I had a cozy movie afternoon the other day, and we made homemade hot chocolate and air popped popcorn with olive oil and sea salt. I made a simple dairy-free hot chocolate for us, and she raved about it. She even asked me for the recipe, so she could make it at home. So cute!
It inspired me to make a superfood version with ingredients that nourish the body. In addition to the vitamins and nutrients you get from coconut milk, pure maple syrup, and cocoa powder, I added marine collagen and adaptogens for a superfood boost.
Collagen: Collagen is a long-chain amino acid and it’s the most prevalent protein in the body. It gives your skin elasticity, makes your hair healthy and is necessary for connective tissue. Collagen powder can improve skin health, bone and joint health, and can help with hormone balance and digestion.
Adaptogens: Adaptogens are herbs or mushrooms that help your body combat the effects of stress, promote a calming state of mind, and enhance feelings of emotional well-being. The Moon Juice Spirit Dust blend that I used contains goji berry, mushrooms, ashwaganda, astralagus, longan berry, red rooted sage, and silk tree bark. You could also use Dream Dust for a pre-sleep superfood hot chocolate.
Superfood Hot Chocolate
1 15-oz can coconut milk
1/4 cup unsweetened vanilla almond milk
1 tbsp. unsweetened cocoa powder
2 tbsp. dairy-free dark chocolate chips
2-3 tbsp. pure maple syrup
1 tsp. Moon Juice Spirit Dust or other adaptogen powder
1 tbsp. marine collagen powder
Whisk together all ingredients in a medium saucepan over low/medium heat. Heat until warm.
