I’ve been buying Blue Diamond Nut-Thins for awhile, so when HyVee gave me a box of the Almond Nut-Thins in Hint of Sea Salt and a box of Artisan Nut-Thins in Asiago Cheese I was super excited. But when they suggested I try a recipe using the crackers, I was intrigued.
I’ve never thought of using crackers in a recipe, especially a sweet treat.
I usually use Blue Diamond Nut-Thins on my cheese platters or to dip in hummus. So I was all about using these crackers in a new way!
Before I share this sweet treat, I just want to let you know how much I really love these crackers. I actually had a few boxes in my cupboard before HyVee provided me with the sea salt and artisan crackers. Luckily, I had never tried the Hint of Sea Salt and Artisan Asiago Cheese flavors (both are delicious!).
Blue Diamond has recipes for dishes such as Nutty Ranch Chicken Strips, Sun-Dried Tomato Turkey Meatballs and Crunchy Asparagus Spears using Nut-Thins, but I, of course, was interested in the chocolatey treat. I made their Sweet and Salty Chocolate Almond Cups, but changed them up slightly.
I didn’t have a mini muffin tin, so I just used parchment paper on a cookie sheet. I also used dark chocolate instead of semi-sweet chocolate and I used raw almonds instead of thier suggested flavored dark chocolate or cinnamon brown sugar almonds. You can buy Blue Diamond Whole Natural Almonds.
They were absolutely delicious! The perfect little indulgence to satisfy your sweet tooth. I liked them especially because they have a bit of crunch and just a little bit of saltiness. I wish I would have thought about it when the chocolate was still melty, but they’d be amazing with a sprinkle of flaked sea salt on top!
