Enjoy the sandwich of summer – the BLT – with a vegetarian twist. Using tempeh bacon adds the flavors of bacon!
Nothing says summer like a BLT with a fresh tomato out of the garden.
I can’t even remember the last time I had one…because I don’t eat bacon.
If you’re like me and avoid most animal proteins or you just want to try something new, I highly recommend making tempeh bacon.
It’s really easy – you just marinate it and cook it – and it picks up the flavors that used in the marinade.
I added avocado to my sandwich because I add avocado to pretty much everything.
I also used liquid aminos in the tempeh marinade. You could use tamari or soy sauce instead. You can also add liquid smoke to give the tempeh bacon that smoked flavor that bacon has.
The one thing that really made this summer sandwich even better was having a glass of homemade cherry limeade on the side.
Fill large mason jar halfway with filtered water. Squeeze the juice of half of a lime into water. Add a scoop of cherry Minerals & Antioxidant drink mix
(bit.ly/sara-minerals). Put lid on jar and shake until combined.
Pour in one can of sparkling water (like La Croix). Add ice and enjoy!
Tempeh Avocado Lettuce Tomato
2 slices Ezekiel bread, toasted
1-2 tbsp. mayonnaise
1/2 package of organic tempeh
1 tbsp. liquid aminos
1/2 tbsp. pure maple syrup
1 tbsp. olive oil
1/4 avocado, mashed
Cut the tempeh into thin slices. In a bowl, whisk together the liquid aminos and maple syrup. Place the tempeh in the bowl, and let marinate for at least 10 minutes.
Pour olive oil in a pan over medium heat. Place the tempeh in the pan and cook until brown and crispy on each side.
Assemble your sandwich by spreading mayonnaise on each piece of toasted bread, adding mashed avocado, lettuce, tomato and the tempeh.
