I’m almost a week into Meat
Free July, and I’ve been eating such delicious food!
This challenge has inspired me to experiment in the kitchen. Changing up your regular meal rotation can be a good thing. If you’re like me, then you make the same 5-6 meals over and over again. It can get boring and make healthy eating more challenging.
I used to try one new recipe a week. It kept meals exciting and added new favorites to my rotation. But I’ve gotten out of the habit of trying new recipes! Meat Free July has been the perfect opportunity to try new meals!
These tacos are super easy and delicious. To spice up the tofu, I used a blend of cumin, chili powder and cayenne pepper. It made these tacos super flavorful.
I whipped this up for lunch one Saturday on a whim. I needed to use up some leftover tofu, and these tacos just happened.
I was pretty impressed with myself. I usually create tofu rice bowls with soy sauce or peanut sauce. So it was a nice change. This is a recipe I will definitely make again and again.
