Ice cream is definitely my favorite warm weather treat. But as much as I love Ben & Jerry, they are no help in reaching summer weight loss goals.
I made this vegan ice cream using frozen bananas as the base – no dairy necessary.
I’ve made vegan ice cream using bananas before, but I never added in any extra ingredients. The result was a very banana-y ice cream. I love bananas but, let’s be real, it didn’t really taste like ice cream.
This version tastes so good, I made it three days in a row!
The only ingredients in this ice cream are bananas, peanut butter, almond milk and vanilla plant protein powder. So much better than store-bought ice cream that has a long list of artificial ingredients and tons of added sugar!
I tested this recipe with a few brands of protein powders to find the perfect flavor and texture. Most of the protein powders created a gritty texture and had a weird aftertaste, which was not ice cream-like at all.
The only exception was the vanilla plant protein powder by Life’s Abundance. The ice cream was smooth and creamy, had a delicious vanilla flavor and had no funky aftertaste. I highly recommend using this protein powder! (I actually rep this brand because I love it so much!)
