Did you enjoy your holiday weekend?
The weekend felt short with Easter festivities and with the BF working both Saturday and Sunday.
My to do list went untouched and I started the week feeling a bit tired. But the BF and I were able to get in a date night, I made it to yoga and I got to spend lots of time with my family.
Friday, April 14
Friday in spring calls for a maxi dress and a glass of chardonnay!
The BF and I went out for sushi at Kyoto. It was delicious!
Saturday, April 15
I made cold salted date oatmeal for breakfast.
The BF took my car to work, so I walked to yoga. It was gorgeous!
I walked to my parent’s house after yoga to help my niece and my mom make an Easter bunny cake. My mom had these bottles of Califia Farms Cold Brew Coffee in her fridge, so I drank one. It was really good!
After a few hours of cake making, my niece and I ate Panera. I had black bean soup and a salad with chicken, blueberries, strawberries, oranges, walnuts and lemon poppyseed dressing.
When I got home, I prepared our garden for planting next weekend. Then I had a kombucha cocktail.
I made more jar salads for the week.
And I made sauerkraut with purple cabbage.
For dinner, the BF and I made a Blue Apron meal, which we ate outside. It was za’atar spiced chicken with pink lemon pan sauce and pearl couscous.
Sunday, April 16
I made salted date oats again. I decided to create a prettier version so I could share the recipe with you. I’m obsessed.
I did a short yoga practice before getting ready for Easter dinner. I went to my sister-in-law’s parent’s house with my parents. There wasn’t much I could eat there – turkey and raw veggies. I ate some chips and guacamole when I got home.
The finished bunny cake! My niece decorated it herself. She and her great aunt always made the bunny cake together and her aunt called it the “damn bunny cake.” Her great aunt recently passed away, and my niece wanted to make the cake in her memory. It was incredibly sweet.
I did my hair, so it deserved a selfie.
Dinner was another Blue Apron meal – Spanish-style potato and chickpea stew with kale and aioli. It was really delicious.
I spent the evening preparing for my 5-Day Real Food Detox, which started today!
