How was your weekend?
My weekend was full of yoga, seeing friends, hanging out with my family, relaxing and eating delicious food.
I really needed to have a weekend without a to do list, and just go with the flow. It was nice to relax when I needed it and have some impromptu fun outings.
Here’s a look at the weekend…
Friday, April 21
I was out of town most of the day for work. It was great to be out of the office and spend time outdoors, but when I got home I totally crashed.
I had been running my Guided 5-Day Real Food Detox all week, going through the detox myself, and I had a packed schedule. I think it all caught up with me. I laid on the couch for the rest of the day and got the rest that I needed.
Saturday, April 22
Breakfast was eggs, sautéed vegetables, pickled red cabbage and toast with vegan butter.
I taught yin yoga and yoga flow at the CHI Wellness Center.
The BF and I met up with our friends, Betsy and Tony (and their son), for lunch at Flippin Sweet Burgers. I had my usual – Holly Golightly veggie burger with no gruyere and no seasoning on my fries. It was fun to catch up with them!
We made our way downtown for the Highway Creepers car show. Our friend, Carmen, was showing her Volkswagen, so we hung out with her. We eventually enjoyed some beer at Gillies. We got these cute paper bag koozies. My dad found us and chatted with Carmen about Volkswagens (my dad LOVES them). We went home when the bar started to get busy and loud.
We went home and relaxed for a few hours. That evening, the BF went to poker night with the guys, and I went to El Limon for Mexican food with my dad and my niece. I had chicken tacos and black beans. After dinner, my mom, dad and niece came over to make s’mores over our fire pit. My niece told a ghost story and assembled our s’mores for us.
Sunday, April 23
I drove to Hastings and met my friend, Russanne, for breakfast at Perkins. I had a mushroom, onion, spinach and avocado omelet, breakfast potatoes and dry wheat toast. It was really good. We hadn’t seen each other in awhile, so it was great to catch up.
I went to Avani Yoga Studio for a yoga workshop with one of my teachers, Suzanne Wright. It was an amazing class that focused on getting out of your comfort zone. We made our way into crow pose…well, I attempted to do crow pose.
When I got home, I threw together this salad with greens, pickled cabbage, chickpeas, pepitas, asparagus and Hilary’s Chia Ranch. I also had a passionfruit La Croix.
I meal prepped for the week. Here’s a look at my meal prep…
- Washed and chopped romaine, broccoli, cauliflower, strawberries and kale.
- Strawberry coconut overnight oats x2
- Chia pudding
- Ginger dandelion tea
- Mexican salad with corn, black beans, zucchini and asparagus
The BF and I ran to Menard’s for a new sprinkler, then picked up a few groceries.
Dinner was a Blue Apron meal – catfish with udon noodles. It was delicious, and not something I would typically make myself. I also enjoyed the new Moscow Mule beer from Kinkaider.
We ended the night by going on a post-dinner walk then watching 13 Reasons Why. Are you watching this? It’s really good so far!
It was a good weekend full of fun and relaxation. Exactly what I needed.
