I’m back! I took a little break from blogging last week.
I’ve been working extra hard on my health coaching business (I had two workshop last week), I started teaching a new yoga class, I’m working on building my nutrition team and I just didn’t feel like I had anything left in the tank for blogging.
My weekend was all about catching up. After being sick and then being at the cabin last weekend, the BF and I needed a weekend at home to resettle.
Friday, Feb. 24
I worked from home because there was a snow storm. It was glorious to be able to work in my pajamas and take truly relaxing breaks when I needed them. My dream life is working from home!
After I finished my 8 to 5 work, I got my taxes ready to give to my accountant. It was a three-hour thing and not fun, but I had to organize all my business finances. When I was finished, I treated myself to a beer.
My tax session sucked my energy, so I made a super quick dinner – veggie burger topped with an egg, sweet potato fries and kale rice blend.
I also whipped up a batch of energy balls for a workshop I was teaching Saturday morning. I used my chocolate plant protein powder, which is the best ever!
Saturday, Feb. 25
I got up early to get ready for my workshop. Breakfast was eggs with sautéed spinach, collard greens and kale and Ezekiel toast drizzled with avocado oil. I also had my Minerals & Antioxidant drink to get hydrated.
I gave my Eating for Energy workshop at Snap Fitness in Grand Island. It was a great group of people! My friend, Ashlee who I met at yoga teacher training last year, owns Snap Fitness. It’s such an amazing fitness studio with lots of positive energy.
When I got home, the BF and I headed out to run errands. He got a haircut, we stopped at Target and we picked up some groceries. Our grocery store has a new section of misfit produce that’s super inexpensive. We got peppers, zucchini, yellow squash, avocados and lemons.
My niece came over and she gave me a manicure and styled my hair, then we played “yoga shop” for awhile.
Later, we met up with a big group of friends at Everest Fusion. I had aloo gobi, which was delicious. Then we went to Gillies for craft beer night, but they also had a band so there weren’t tables and it was too loud to chat. So we ended up at Platte Valley Brewery for the rest of the night. I had two beers throughout the evening. We stayed at the bar until closing time and went to Daylight Donuts after. I didn’t have any donuts, and we got home around 1:30 a.m.
Sunday, Feb. 26
I got up 8:30 a.m., then fell asleep on the couch until 10:30 a.m. I can’t hang with the late night crowd. I had Ezekiel toast topped with cashew butter, banana slices, chia seeds and honey for breakfast.
I laid on the couch all morning watching Mad Men. I realized I never watched the second half of the last season! What?!?
I finally got up after noon and meal planned and prepped for the weekend. I also threw one of my freezer crockpot meals in the slow cooker. I made detox water, goji berry overnight oats, salted date overnight oats, chocolate protein chia pudding, roasted sweet potatoes and I cut a butternut squash.
The BF and I had some Traditional Medicinals Everyday Detox tea with fresh ginger and honey while we listened to jazz music. I did some cleaning and organizing.
We had our crockpot lime chicken with corn and black beans over rice for dinner. It was delicious! Then we watched the Oscars. The Best Picture announcement was crazy!
It was just the weekend we needed…a weekend at home getting resettled with some fun and relaxation sprinkled in.
