I hope you had a wonderful holiday weekend! I took Friday off of work for a quick road trip with the BF, so I had an extra long holiday weekend. It was much needed!
I also started Meal Free July on Friday. I love challenges like this because it allows me to get creative in the kitchen. I made some delicious meals!
I tend to overshare in these recaps, so I tried to be more concise in this week’s post! (it’s so hard for me because I want to share everything!)
Thursday, June 30
The BF and I drove to Omaha and had dinner at Mark’s Bistro in Dundee. I picked the restaurant because it has one of the best outdoor patios in Omaha, but we got seated inside. You have to ask to sit outside. Once we were inside, we felt weird asking to move. But the interior is beautiful, and the wine I ordered was amazing. (Los Vascos Reserve 2013 from Chile)
We ordered house made tater tots with fondue, which was just ok. It sounded really promising, but just didn’t wow us. I had the portobello sandwich, which was really delicious.
After dinner, we shared a flight at Scriptown Brewery in the Blackstone District. They have a beer called Ups & Downs, which is brewed with cold press coffee. So good! We also stopped at Brothers Lounge, which is a place the BF used to go to in college. It’s super divey, but it was fun to see where the BF used to hang out.
Friday, July 1
The reason we went to Omaha was because I had an appointment with a functional medicine practitioner. I went to Dr. Allison Blessing at Functional Medicine of Omaha, and I was super impressed. She spent about an hour with me, really listening to my concerns and sharing some thoughts and options for me. I have to get some blood work done to learn more. I’ll share more about my experience when I know more about what’s going on with my health.
The BF picked me up from my appointment and took me to the Subaru dealership! I’m going to buy a Subaru! This was the first time I test drove the Crosstrek, and I’m totally in love. I decided I was going to buy one over a year ago. It’s happening!
We spent time in the Old Market shopping.
We grabbed lunch at Himalayas. I love outdoor seating. There were a bazillion people in town for the Olympic swim trials, so it was fun to people watch.
I had vegetable curry, which was spicy and wonderful.
Then we went to Village Point. I tried on all the clothes at Athleta and Lululemon, and I didn’t buy anything! But I spotted my yoga teacher trainer, Carole Westerman, modeling at Lululemon! Isn’t she gorgeous!
I did buy some things from Sephora. All products I’ve used before and love.
We drove home after shopping, and grabbed dinner at Flippin Sweet Burgers. I had the veggie burger, of course. We actually went to the new burger place in town, Angus Burger, first. But they didn’t have any vegetarian options. What gourmet burger place doesn’t have vegetarian options?!? So we left and went to our old favorite, Flippin Sweet.
Saturday, July 2 / Sunday, July 3
I spent most of Saturday and Sunday cleaning, organizing, purging and rearranging. Like, hours and hours and hours. The BF worked all weekend and it was cloudy and rainy, so it was the perfect weekend for deep cleaning.

Monday, July 4 – Happy Fourth of July!
I started the day with 30 minutes of run/walk intervals and a 30 minute HIIT workout.
I made a special recipe for the blog, which I’ll post later this week – Super Fruit Antioxidant Iced Tea. Yum!
I picked up groceries.
For lunch, I made tofu black bean tacos, which I’ll also be sharing with you. These were so so delicious!
I spent most of the afternoon lounging on the couch watching Devious Maids. I enjoyed a patriotic white wine with blueberries and raspberries.
Meal prep. I made way too much food! I’m only going to be home for two days this week before I head off on a little vacation.
Vegetarian Fourth of July dinner. Black beans with brown rice, asparagus, mushrooms and corn on the cob.
I had dinner at my parent’s house, and my mom also made a delicious blueberry crumble.
I watched a bunch of fireworks from our front window while I drank some Nighty Night tea. It was definitely my lamest Fourth of July ever, but the BF worked until 10 p.m. and I didn’t have any plans.
I truly needed this weekend. The BF and I really needed some time together. All summer, he’s been working crazy hours, overtime and weekends. After being out of town for so many weekends in May and June, our house was a disaster. It felt good to give it some attention. I also needed a day of lounging and watching silly TV.
