Another weekend gone by too fast!
My weekend was a good mix of movie watching, spending time with family, doing housework, blogging, working out, running errands and hanging with the BF. I got through most of my weekend to-do list (which doesn’t always happen!).
I made it through my second weekend of my elimination diet. Find out why I’m doing an elimination diet here. This weekend wasn’t as great as last weekend. A lot of the food I ate was pretty blah and uninspired. I definitely need to change things up a bit this week so that I can get through this experiment!

Friday, Jan. 23
After work, my mom picked me up to go shopping. She needed a new outfit for a special event Saturday night. I ended up picking up a few things for myself during out shopping excursion.
I bought a pair of Old Navy Pixie Pants that were on super sale. I bought a pair last fall and I LOVE them! They’re so flattering and comfortable. They will be perfect to wear this spring with ballet flats or heels.
I also picked up these Mossimo Printed Leggings from Target. I’ve shared my addiction to colorful workout leggings here before, so it shouldn’t be a surprise that I bought these!
My last purchase was an asymmetrical zip jacket by Cable and Gauge. It will be cute to wear to yoga or with jeans on the weekends.
My mom also found an outfit! I didn’t do all the shopping. I wasn’t even planning on buying anything!
After my mom dropped me off, the BF and I went out to dinner. We’ve been eating super healthy, light and simple since I’ve been doing my elimination diet, and he was craving a burger. So we went to the Cellar, a pretty popular restaurant in town.
I ordered shrimp and vegetable skewers over rice and sweet potatoe fries, and everything was terrible. The vegetables were undercooked, the shrimp had no flavor and the rice tasted like it was cooked three days before they plated it. And the fries were soggy and limp. I’ve never had a good eating experience at the Cellar, but they apparently have amazing burgers.
We ended the night by watching the movie Touching the Void, an intense movie about two men climbing in the Peruvian Andes.
Saturday, Jan. 24
I woke up early to go to PiYo at the YMCA, but on my way there I got a call that the class was cancelled because the instructor was sick. I thought about going to a yoga class. But when I got home the BF was up and getting ready to watch the movie 180° South, a movie that follows adventurer Jeff Johnson as he retraces the 1968 journey to Patagonia by Doug Tompkins (founder of North Face) and Yvon Chouinard (founder of Patagonia). So I had to watch it. We were apparently having a weekend of adventure movies.
For breakfast, I sauteed some bananas in coconut oil and cinnamon and ate them over gluten-free oats with chia seeds, hemp seeds and rice milk. I also topped it with sunflower seed butter.
I got in an at-home barre workout using Gigabody (review and giveaway this week!). Barre workouts are no joke! My legs were on fire!
Then the BF and I got our meal planning done for the week!
I met a client at Tru Cafe for a health coaching session. I enjoyed a gingerberry kombucha.
In the afternoon, I dusted and vacuumed (major win for me!), blogged, watched episodes of The Chew, did some laundry and ate a smoothie bowl with a Sambazon acai pack, blueberries, kale, 1/2 a banana and rice milk and topped with chia seeds, hemp seeds and more banana slices.
In the evening, the BF and I went to mass at the Catholic church. It was my parent’s 34th wedding anniversary, and they had their marriage blessed in the church during a private ceremony after mass. It was incredibly sweet and such a wonderful way to celebrate all the years they’ve spent together.
The BF and I, my parents, brother, sister-in-law, niece and my sister-in-law’s parents went to El Protrero for Mexican food after.
I had chicken fajitas (no tortillas, no sour cream, no chips and salsa since I’m still on my elimination diet). It was a great night spent with my family!
Sunday, Jan. 25
I woke up feeling kind of blah, and totally over my elimination diet. I was absolutely sick of eating oats for breakfast (I’d eaten gluten-free oats for about 13 days in a row), so I attempted to make protein pancakes without eggs. I used a vegan flax egg replacer, a mashed banana, organic brown rice protein powder, chia seeds, cinnamon, stevia and 1/4 cup gluten-free oats. I topped them with sunflower seed butter. They were OK.
After relaxing with a few episodes of Parks and Recreation, the BF and I went to Target to look at comforters. We’ve needed a new one for our bed since we moved into our house in July. We finally found one we love, and we used the gift cards we got for Christmas to buy it!
We also went to HyVee for groceries.
By the time we got home, I was really hungry and I didn’t have anything prepped for a quick lunch. I was actually feeling pretty low energy, and nothing sounded good. I was definitely feeling over my elimination diet. In my normal life, I would have made an apple and brie grilled sandwich and had a salad.
I ended up having some basil gnocchi that was just OK, and a leftover chicken thigh.
The BF had to go into work in the afternoon, so I worked on some health coaching stuff. When he got home we watched the last episodes of Parks and Recreation. We’re totally caught up to the current season!
I did some food prep for the week while the BF made dinner. I made chia pudding, smoothie packs with kale, cranberries, blueberries, aronia berries and 1/2 banana each, apple cider vinegar drinks and overnight oats.
For dinner, the BF grilled chicken and roasted carrots, cauliflower and Brussels sprouts.
I had an orange for dessert.
We ended the night with an episode of Transparent and checking out some of the new Amazon pilots.
