Happy First Day of Summer!
My weekend was the perfect summer weekend. A small town festival, bike rides, grilling, pool time, sangria. This is how every summer weekend should be.

Friday, June 17
After work, I had a phone session with a health coaching client. I’m feeling super excited about the progress of my clients! They are losing weight with ease, and without dieting or deprivation. Hearing about my client’s success was the perfect way to kick off the weekend!
I celebrated with a homemade berry margarita. Summer perfection.
The BF and I grabbed dinner at Old Chicago. I hadn’t eaten much all week because I had a migraine or headache for most of the week, so I was excited about pizza. I got the Mediterranean Farmer pizza, which was delicious. It has sundried tomatoes, artichoke hearts, spinach, red onions, red pepper and goat cheese.
I ate half the individual sized pizza, which was about 480 calories. I mention this because some of their salads have well over 1,000 calories. While I don’t count calories, I do think it’s helpful to be aware of what you’re consuming at restaurants.
Saturday, June 18
The BF and I headed out early for a fun day trip to Stromsburg, the Swede Capital of Nebraska, with our friends Meggan, Kevin and Russanne.
I slept in because my headache came back, so I didn’t have time to make breakfast. I grabbed a Naked Green Machine, a banana and a Kind bar at a convenience store on our way there. That’s a lot more sugar than I would normally eat for breakfast, but I needed some protein and healthy carbs, and some veggie nutrients to help with my head, and those were the best options at a gas station.
Stromsburg was having its annual Swedish Festival. Russanne was the only one in the group with Swedish heritage, but we thought it would be a fun summer adventure.
Our first stop was at Donledens Daylight Donuts to use the bathroom. We ended up buying donuts…since we used the bathroom.
The town square was full of artists, crafters and other vendors.

I bought this cute bicycle necklace for $5. I already have a gold bicycle necklace, but silver was needed ; )
We checked out some local shops. Stromsburg’s population is about 1,000, but they have some cute antique shops, boutiques and a fun coffee shop for a town that small.
We went to Taste of Sweden for lunch at the local community center. The meal featured Swedish meatballs, sausage, potatoes, green bean casserole and ostkaka, a Swedish cheese dessert. I didn’t get the meal because it was so meat heavy. I bought a Swedish Tea Ring, which is an almond pastry. Very good!
Then we watched a viking reenactment!
And that was it for our day of Swedish heritage. I bought some kettle corn for the road since I didn’t eat lunch.
When I got home, I made green tea sangria for Sunday. It ended up being light and refreshing. I followed this recipe.
If I made it again, I would use less green tea. I like a stronger sangria. I would also use fruit you can eat. The best part of sangria is boozy fruit.
The BF grilled veggies and turkey burgers for dinner. I made a buffalo blue cheese salad with my turkey burger, and it was amazing! A salad was much needed after my high sugar day of eating.
After dinner, we road our bikes to the local Pride Festival. There were drag performers and entertainers at Harmon Park. We arrived at the end of the day’s events, but it was still fun to see such a big crowd.
We ended the night at Gillies with the new Kinkaider Dark Mexican Lager. The BF and I love Kinkaider beer. The brewery is in Broken Bow, NE.
Sunday, June 19
Breakfast was scrambled eggs with kale, red and orange peppers and onions. We used the eggs I bought at the farmer’s market and they were so so good!
After a trip to Target and the grocery store for essentials, we walked to my parent’s house for some pool time. My parents have a huge above ground pool and a hammock. This is where I’ll be for the rest of the summer.
Lunch was a repeat of Saturday night’s dinner.
I drank my green tea sangria while I meal prepped for the week. Here’s what I prepped…
- Overnight oats
- Coconut cherry chia pudding
- Beet apple cider vinegar morning drink
- Sugar snap peas
- Kale
- Red leaf lettuce
- Red and orange peppers, and onions
- Hard boiled eggs
- Hummus
For dinner, the BF grilled turkey cutlets and garlic cheesy potatoes. We also had salads.
We ended the night at a concert in the park. The Talbott Brothers were performing as part of the Kearney Area Arts Council Summer Concerts in the Park Series.
