Mondays in the summer are always a bit of a let down. After having two days of fun, relaxation and sunshine, it’s back to my freezing windowless office.
I realized recently that I live for the weekends. Starting on Monday, I’m thinking about what I’ll be doing on Friday at 5 p.m. It’s not the life that I want to be living, which is motivating me to work hard on a few things. I’m feeling a need for change!
But for now, I have my fun, adventure-filled weekends…
Friday, June 2
After yoga, my friend, Lauren, and I grabbed dinner at Cunningham’s. I had grilled chicken skewers, grilled vegetables and a Shock Top beer.
I then made a stop at my parent’s house so my niece could give me a manicure. Her manicure station has been in storage for a few months as my parents got their old house ready to sell. They just moved and she’s back in business.
The fiancé and I spent the rest of the evening at Gillies watching some great bands and running into a bunch of friends. It was an eventful evening!
Saturday, June 3
I woke up feeling so tired. We didn’t get to bed until 2 a.m., and my parents picked us up at 9 a.m. for a road trip. I had cold protein oats with berries, peanut butter and bee pollen before we left.
We drove to Lincoln to see Matilda at the Lied Center. It was one of my niece’s birthday gifts. We got to Lincoln early and had lunch at Honest Abes. I had a vegan burger and fries, and they were delicious.
We walked around downtown until the show started. The musical was really fun, and all the child actors were amazing.
Before driving home, we stopped at HomeGoods and Trader Joe’s. I got a couple new things at TJ’s – jalapeño lemonade (for margaritas), matcha Joe-Joe’s, organic cold brew coffee, roasted cocao nibs and super cheap white wine.
I wasn’t feeling well on our way home and for the rest of the evening. I think there were lentils in my vegan burger, and my body doesn’t like lentils. I ended up drinking peppermint tea when we got home, and I skipped dinner.
Sunday, June 4
I slept for over 10 hours, and started the day really slowly. I drank coffee and a berry smoothie while I read outside. I’m currently reading Money: A Love Story by Kate Northrup. I’m working on creating my dream life so I don’t hate Mondays anymore!
After picking up groceries and having a salad for lunch, I spent a few hours weeding our vegetable garden, digging our new compost pile and picking rhubarb (which grows wild in our yard).
I then washed and chopped 12 cups of rhubarb and made strawberry rhubarb crisp. I felt like a pioneer woman! That is if pioneer women made vegan strawberry rhubarb crisp ; )
I was totally exhausted after working outside all day. The BF grilled vegetables, tofu (for me) and pork (for him) while I made quinoa. we ate outside under our pergola, and I enjoyed some white wine.
We had strawberry rhubarb crisp for dessert. I made banana “ice cream” to scoop on top. It was delicious! I used the vegan vanilla ice cream recipe here.
