Ahhh, summer weekends are just the best. I guess it’s not quite summer yet, but the weather feels very summer-like.
I taught three yoga classes, then spent the rest of the weekend relaxing and spending time outdoors. The fiancé and I got in a good workout on Sunday to prep for an upcoming trip.
Here’s a look at my weekend adventures…
Friday, June 9
I taught my Sweat & Sip: Yoga Happy Hour after work. The theme was balance, and we practiced lots of balancing poses. I’m teaching this class every Friday at 5:30 p.m, so you should come! Sign up here.
After class, a few of us went to Thunderhead to have a craft beer.
When I got home, I made sautéed vegetables, wild rice and a black bean burger.
When the fiancé got off work, we went on a walk in our hiking boots to break them in. We’re getting ready for a big adventure vacation!
Saturday, June 10
Breakfast was a green smoothie made with almond milk, spinach, a frozen banana, liquid fish oil and vanilla plant protein.
I subbed two yoga classes at the CHI Wellness Center.
Lunch was wild rice, sautéed spinach and a black bean burger topped with sriracha carrot hummus.
I also had a Square Organics bar. The company sent me some bars to try, and they are delicious! I don’t eat chocolate often because it typically has milk in it, but these are vegan. I’m obsessed! You can use the code “SWEETSUCCESS” to get 20% off your first order.
We didn’t have any plans for the day and it was really hot, so we hung out inside, picked up groceries and made a Target run.
We ended up having to make a trip to Hastings for a family emergency, and we were there all evening.
Sunday, June 11
I started my day sitting under the pergola drinking coffee and lemon water, and reading and writing in my gratitude journal.
I made protein pancakes for the fiancé and I.
Then we headed out for a hike. We started by walking stairs at the Yanney Heritage Park tower, then we headed to Cottonmill to hike the Oldfather Trail.
We took two loops around the trail.
It was really hot, but it was a great hike.
For lunch, I made my own vegetarian version of a BLT with tempeh bacon, avocado, lettuce and tomato. I’ll share the recipe with you soon.
We relaxed all afternoon to recover from our hot hike. I watched the Handmaid’s Tale, which is so good!
For dinner, the fiancé grilled chicken thighs and vegetables and I made couscous and green salads. I also made dairy-free dump ranch.
The fiancé watched the US v. Mexico soccer game, so I worked on some events that I have coming up. You should come!
