Happy Monday!
I had a wonderful weekend celebrating fall, cooking, baking, relaxing and spending time with family.
This was my last responsibility-free weekend for awhile, so I took advantage of my time. In October and November, I’m teaching a bunch of wellness classes and workshops on Saturday mornings so I’ll have a lot going on during the weekends.
But this weekend was all about relaxing.
Friday, Sept. 30
I took the day off from work with the intention to work on Sweet Success Health Coaching. I needed to prepare for upcoming workshops, do some administrative work and work on my fall marketing. But I felt terrible. I was still recovering from a long day Wednesday – read more here.
So after a day of relaxing, I spent the evening doing a little work.
Saturday, Oct. 1
I woke up at 6 a.m. and couldn’t go back to sleep, so I got up and started working. I sent my latest Sweet Success Newsletter (if you haven’t signed up yet, do it here!) and wrapped up Sweaty September. Then I drank coffee.
And made a berry smoothie – coconut water, frozen mixed berries, marine collagen, vanilla plant protein and ice.
Then I went to a yoga class at the CHI Wellness Center. It felt so good!
I had eggs over avocado toast for lunch, then the BF and I picked up groceries for the week. I was so excited because apples are in season again!
I put up Halloween decorations. This is really the extent of our decor.
I made Thai Vegetable Curry from the Happy Cook by Daphne Oz for dinner. It was really good.
The BF spent the evening at Oktoberfest, an event organized by the Chamber of Commerce. We tried lots of delicious Nebraska-made beers.
Not sure why I looked so worried in this photo. My fave craft beers of the night – Scratchtown Oktoberfest, Brickway Doppelbock, First Street Brewing Porter and Kinkaider Oktoberfest.
Sunday, Oct. 2
I slept in and awoke to the most amazing feeling in the house…a cool breeze blowing in through open windows. I love fall.
I made protein pancakes topped with almond butter and maple syrup for breakfast. I also had an antioxidant rehydrating drink because of the beer from the night before.
I meal planned for the week.
The BF and I joined my family at the Catholic church for their Oktoberfest celebration. They had a turkey dinner (I didn’t eat anything), Bingo, a client auction and games for kids. It was a lot of fun.
When I got home I swapped my closets and got out all of my fall/winter clothes. Boots and sweaters!
I spent the afternoon in the kitchen. I made Salted Coconut Chocolate Energy Balls – recipe coming soon!
Apple Cider Vinegar Drinks – recipe coming soon!
Vegan Chocolate Breakfast Bars from the Happy Cook by Daphne Oz.
I had planned on making a hearty soup for dinner, but it was warm outside and we weren’t feeling it. So we went to Flippin Sweet Burgers for dinner.
It was a great weekend! Now I have to buckle down and get some work done for my upcoming workshops! Here I go.
