I made it through another long weekend of yoga teacher training!
I headed to Avani Yoga Studio in Hastings on Friday for three days of training and yoga classes. Our teacher this weekend was Carole Westerman from Evolve to Harmony Yoga in Omaha, and she is amazing! I loved learning from her and taking her yoga classes.
Here’s a recap of my yoga weekend…
Friday, June 3

We started the weekend with a yoga class taught by Jenni, who teaches at Avani. It was a great class!
I rehydrated from our yoga class with my fave Minerals & Antioxidants drink while we learned about planning yoga classes.
We practiced specific poses with partners.
I stayed at the BF’s dad and stepmom’s house, and inhaled a salad when I arrived there at 10 p.m. after training was over.
Saturday, June 4
I grabbed a Naked Almond Milk Juice Smoothie on my way to the yoga studio because I didn’t have my usual plant protein. This smoothie tastes good and has minimal ingredients. I wouldn’t buy it frequently because it’s way cheaper to make your own smoothies, and you can usually cut the sugar content down in homemade smoothies.
I also picked up an iced coffee. My drink situation was a little much – smoothie, coffee, water and greens.
We started the day with a yoga class taught by Carole. That’s just me snapping selfies.
Then it was time to learn.
During our lunch, I went to my friend Meggan’s house for our friend Russanne’s baby shower. I helped plan the shower before I knew I would be in yoga teacher training during the party. Meggan made delicious rosemary and peach infused iced tea. I’ll be making this all summer long!
The shower was fun, Russanne looked gorgeous and the food was delicious. Spinach and artichoke dip in ramekins, cheese and crackers, veggies and dill dip, and fresh fruit.
I left the shower early to get back to training and to learn about prenatal yoga and anatomy.
The day was done at 7 p.m., and I drove the hour back home to spend some time with the BF. I bought this super cute Om shirt at Avani.
I was starving when I got home! The BF and I went to dinner at a new Indian restaurant – Everest Fusion. We shared samosa chaat, which was delicious.
I had chana saag and garlic naan…and a glass of chardonnay. So so good!
Sunday, June 5
Breakfast was oats, chia seeds, almond milk, vanilla plant protein powder, blueberries and almond butter.
Then I was off to another day of yoga. I finished listening to You Are a Badass on the drive to Hastings. I’m obsessed with this book. I think I’m going to read it again. We started the day learning about koshas, then we took a yoga class taught by Carole. We ended some yoga nidra, which is incredibly relaxing.
We got to spend some time outside for practice teaching.

I had the same salad as Friday for lunch. I bought them at Russ’s Market. Ashlee bought me a chocolate chip cookie, so I enjoyed that as well.
We spent the rest of the afternoon learning about chakras and our energy systems.
Then I headed home. The BF and I had dinner at my parent’s house – turkey burgers, peppers and onions, roasted potatoes, salad and blueberry pie. Summer!
I spent the rest of the night planning my morning outdoor boot camp and getting goodies together for my boot camp participants. Boot camp started this morning! Email me at [email protected] if you’re interested in coming to my outdoor workouts!
It was another exhausting weekend, but I’m feeling really inspired and excited about my own yoga practice and sharing yoga with others!
